Chicken Liver Parfait.

Ingredients

Step1

½  btl Madeira wine

½ btl Port

¼ btl Brandy

1 pt Red wine

2 Bay leaves

3 sprig fresh thyme

2 White heads garlic

4 Chopped shallots

Step2

2kg Chicken Liver

2kg Butter

24 Eggs

12 Egg Yolks

Salt

Pepper 

Method

Step1

Bring Madeira, port, brandy red wine, bay leaves, thyme, garlic and shallots to the boil then simmer and reduce to 1/3. Strain with a fine sieve and add the mix together into step 2.

Step2

Blend liver add butter, eggs, egg yolks, salt, and pepper. Mix all together then sieve with fine sieve.

Pre heat oven to and cook slowly in the baia mare slowly in the oven for about 1 hour and 30 minutes.
