Ingredients
Sesame oil
1 Small onion (diced)
Basmati rice 180g
Water 600ml
2 large eggs
Dark soy sauce
Salt
Black pepper
Method
Bring the water to the boil then add the rice and stir until it comes back to the boil. Put a lid on the pan and remove it from the heat, set aside for 15 minutes. Alternatively if you have a steamer that goes in the microwave you can add the rice and water and put it on for 15 minutes, rice will be cooked. Set aside.
In a wok, put it on the heat add about a table spoons worth of sesame oil and start frying off the diced onions until a crispy bite, add the eggs and stir until eggs are like scramble eggs.
Add all the rice in season with salt and pepper then stir all the ingredients together. Add soy sauce to the ingredients roughly 50ml. Taste and season if needed.
