Pastry Cases

10 Eggs                           / 5

280g caster sugar        / 140

300ml double cream  / 150

200ml lemon juice      / 100

4 tbsp zest                    /2

Method

 Set oven to 150°C and fan on number 2

Mix everything together then sieve.

Pour into the pastry cases and cook for 30 – 40 minutes till just set.
