Ingredients

Step 1

8 gelatine

1.1 Litres Milk

1.1 Litres Cream

4 Vanilla leaves

100g Sugar

Step 2

Zest & Juice of 6 Clementine’s

1 Stick of Cinnamon

3 star Anise

1 Stem Ginger in Ginger Syrup

Method

Bring all ingredients to the simmer.

Leave to infuse for 10 minutes.

Add gelatine leafs

Pass through fine sieve

Pour into moulds then leave in the fridge to set.
