Peanut Butter Parfait.

Ingredients

20 egg yolks

400g sugar

200 ml water

1L double cream

360g peanut butter 

Method

Boil sugar and water until 118c

Whisk cream till soft peaks

Heat up peanut butter

Pour sugar syrup in yolks slowly, continue to whisk until cool

Fold in the peanut butter and cream

Freeze for 6 hours
