Potato Wedges

I think it’s safe to say that everyone likes potato wedges. Potato wedges go well alongside other dishes such as Pizzas, toast’s panini’s etc…  And they are so easy to make.

When I’m making wedges I try and look for washed jersey royals if possible but it’s not that important, any other potato will do the same job.

If you do get some jersey royals, I tend to cut them into 4 pieces. You don’t want your potato wedges to be too thin, and you don’t want them to be ridiculously thick, so think about that when selecting the potatoes you use.

Ingredients

Washed potatoes (Cut into wedges)

Chilli powder

Garlic powder

Salt

Black pepper

Method

Pre heat deep fryer to 125c/130c then blanch wedges until soft ish (Not to soft otherwise they will break)

While still hot put straight into a bowl and season using salt, pepper, garlic powder and chilli powder.

Mix in and set aside. For about 10/20 minutes. During this time the potatoes will suck in all the flavours.

Pre heat the oven on 180 and bake off on a baking tray until cooked, wedges should be slightly crispy and coloured.
