Ingredients
Medjool dates, stoned and chopped 750g
Water 1, 250 ml
Bicarbonate of soda 5 tbs
Butter 300g
Caster sugar 750g
Eggs 10
Self raising flower 750g
Vanilla essence 5 tsp
Method
1. Pre head oven to 160
2. Put grease proof paper in a full sized baking tray.
3. Boil the chopped dates in water for about 5 minutes until they are soft, add bicarbonate of soda and mix together.
4. Cream the butter and sugar together until light and white and then gradually beat in the egg’s.
5. Mix in the dates, flower and vanilla essence, stir well.
6. Pour into the baking tray
7. Bake in the oven for about 30 to 40 minutes.
Allow to cool down before portioning.
