Ingredients for the base

Digestive biscuits 2pkt

Butter, melted 250g

Cling film

Preparation

Line baking tray with cling film

Method for base

Crush biscuits in a plastic bag, roll with a rolling pin until fine bits. Add butter and stir well.

Spread out biscuits and butter mix in the baking tray and smooth out to make a firm base for the cheese cake. Put base in the fridge to set the butter.

Ingredients for cheesecake

Mascarpone 2k

Double cream 1ltr

Sugar 115g

Gelatin soaked 8 sheets 

Strawberry coulis 500g

Method

Warm the cream and sugar in a pan, add gelatin to dissolve.

Cool down a little and mix through the other ingredients.

Pour on top of the base and chill in the fridge to set.

Ingredients for jelly topping 

Strawberry coulis 500g

Gelatin soaked 4 sheets

Method

Put coulis in a pan and warm up. Once coulis is warm add the gelatin and stir to dissolve. Pour over the cheesecake then put back into the fridge to set.
